I have tried and failed many times to find a homemade tomato soup recipe that I like. Countless times I have ended up with soup that is more like tomato basil, which isn't bad, just not what you want when you are craving your childhood favorite of grilled cheese and tomato soup!
I use all organic ingredients. The tomato paste and bone broth that I use, from my research, does not appear to have corn and I have never reacted to them. I will be doing a post on the brands I use soon. Ingredients: 1 - 7oz. jar/can tomato paste 2 c. chicken bone broth, unsalted 1 tsp. salt 1/2 tsp. sugar Whisk together in a kettle and heat through. Makes two servings. See how easy that is?! I literally can't tell the difference from canned soup! I was a little skeptical of trying sugar, but I believe that is that key to the flavor. I like to use bone broth as it has lots of nutrients and protein, but you can use any form of chicken broth you have. If your broth has added salt than you may want to cut the salt in the recipe to half. Hope you enjoy! God Bless, Marita

I love a cup of hot cocoa in the evening. I have always preferred it made from scratch, but it isn't always as convenient. I played around with different ways of making it quickly but it never tasted right. I finally got a easy recipe that is just as good as stove top hot cocoa!
For one serving: 1 TBSP. cocoa 1 - 1 1/2 TBSP. sugar (this is just to preference, do as little or as much sugar as you like) Water Milk Vanilla extract Mix the sugar and cocoa in a microwave safe mug. Add just enough water to make a smooth paste, try your best to mix till there are no lumps. Microwave for 10-15 seconds. If there were still some lumps then usually this is where I can get them out. Fill up the rest of the way with milk and mix well. Microwave until desired temperature. Add a dash of vanilla extract. This recipe should be easy to change to dairy free or sugar free. It is simple enough that you can make it less sweet, add more cocoa, or change it to peppermint extract instead of vanilla...whatever you want! I will often do the recipe for chocolate milk, just don't microwave after adding the milk. Let me know if you try any variation of it and what you think! God Bless, Marita Hey Everyone!
Sorry it has been a while! I have never done a personal post so decided I would do a short post to let you know what is going on in my life. I have been busy with lots of small things this last year. Mostly with settling into my new life. I think I jumped the gun with this blog about being "corn-free". I still am not one hundred percent corn-free and it is hard to stick to my diet when everyone wants to eat out or I get invited to family events. I am still learning and I am so thankful my allergy isn't serious and gives me the freedom to learn slowly. I haven't tried too many new recipes lately. Mostly have been busy researching different brands and trying to find foods and products that I can have/use. I am hoping to get a post up of the toiletries I use and ones I want to try and also of brands of food I use (though some may not be 100% corn-free. Please do your own research if you have a serious allergy!). I have been trying to journal more, I have always found it to be a way of coping. I have written very little in the last few years and hope to change that. I recently have been trying to bullet journal, though it isn't grand like some peoples I enjoy the freedom of being able to plan in a way that works for me. I am so excited for this new year, mainly because I know so much more about my health and I am so much more confident in myself. For so long I have struggled with my looks, weight, hair, etc. Being short always made it harder to stay within a healthy weight. Since I cut out corn I lost all extra weight I had and now struggle to keep the weight on. Personally, I am happy for the trade! My hair and skin have got so much better also, but the biggest thing is how I feel. I believe feeling healthy has been the biggest boost in my confidence. I want to encourage you all this new year to strive to live a healthy life. Learn about your body and it's needs. 'What? Know ye not that your body is the temple of the Holy Ghost which is in you, which ye have of God, and ye are not your own?" - 1 Corinthians 6:19 I believe one of the ways we can honor God is to take care of this body he has given us for a time, this temple we have while on earth.
